Spicy Chickpea Curry

Ingredients
- •2 cans chickpeas, drained
- •1 can coconut milk
- •1 can diced tomatoes
- •1 onion, diced
- •3 cloves garlic, minced
- •1 tbsp curry powder
- •1 tsp chili flakes
- •2 tbsp vegetable oil
- •Salt to taste
Steps
- 1.Heat the oil in a large pot and sauté the onion until soft, about 5 minutes.
- 2.Add garlic, curry powder, and chili flakes; cook for 1 minute until fragrant.
- 3.Stir in the diced tomatoes and coconut milk, then bring to a simmer.
- 4.Add the chickpeas and simmer for 15 minutes, stirring occasionally.
- 5.Season with salt and serve over rice.
