Malva Pudding

Ingredients

• •1 cup sugar
• •2 eggs
• •1 tbsp apricot jam
• •1 tbsp white vinegar
• •1 tbsp butter, melted

Steps

1. 1.Preheat the oven to 350F (180C) and grease a baking dish.
2. 2.Beat the sugar, eggs, and apricot jam together for 3-5 minutes until light, pale, and fluffy - this whipped air is most of what gives the pudding its light crumb.
3. 3.Stir in the vinegar and melted butter.
4. 4.Sift the flour, baking soda, and salt together, then fold into the egg mixture alternately with the milk, mixing just until combined.
5. 5.Pour the batter into the prepared dish and bake for 35-40 minutes, until a skewer inserted in the center comes out clean and the top springs back.
6. 6.While the pudding bakes, combine the sauce cream, butter, sugar, milk, and salt in a small saucepan and heat, stirring, until the butter melts and the sugar dissolves.
